Mushroom, Beef, & Quinoa soup

It’s fall, y’all! Who loves soups when the weather is cool? I know we do! Shoot, we love soups all time of the year. They are a one pot, quick fix meal and my 1st grader even loves taking them to school in his lunch. Easy! I took a mushroom soup recipe and added lots of veggies and beef to it. My husband cannot go without meat, so we eat it at dinner just about every night. If you are vegetarian, just omit the beef. And if you don’t eat beef, add chicken instead.

I took this recipe and threw in

2 lbs of lean sirloin

1 can of diced tomatoes

2 cups baby kale

After cooking the onions and garlic together, I added in the meat and let brown for about 5 minutes. Then I added everything else in except the mushrooms and I let cook on low heat for about 5 hours. Serve with crusty bread or crackers! Enjoy!
